A quick note on safely defrosting your turkey. It takes about 36 hours to defrost in the fridge. Liquid will collect around the turkey; you should pour it away if possible to prevent spills. Once defrosted, cook it straight away or keep it in the fridge, tightly covered, for up to a day.
